Ingredients

  • 1 ½ Cups All-Purpose Flour
  • 1 Cup Granulated Sugar
  • 1 ½ Tsp Baking Powder
  • ½ Tsp Baking Soda
  • ½ Tsp Salt
  • ½ Cup Unsalted Butter
  • 2 Large Eggs
  • ¾ Cup Whole Milk
  • 2 Tsp Vanilla Extract
  • ½ Cup Rainbow Sprinkles

Instructions

  • Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • Mix dry ingredients – In a large bowl, whisk flour, baking powder, baking soda, and salt.
  • Cream butter and sugar – Using a mixer, beat butter and sugar until light and fluffy.
  • Add eggs and vanilla – Mix in eggs one at a time, followed by vanilla extract.
  • Combine wet and dry ingredients – Alternate adding dry ingredients and milk, mixing until just combined.
  • Fold in sprinkles – Gently mix in the sprinkles without over-mixing.
  • Fill cupcake liners – Distribute batter evenly, filling each about ¾ full.
  • Bake for 18 minutes or until a toothpick inserted in the center comes out clean.
  • Cool on a wire rack before frosting and decorating.

Notes

  • Use jimmies instead of nonpareils to prevent color bleeding in the batter.
  • Let cupcakes cool completely before frosting to prevent melting.
